Nyborg's farm is located in the middle of a rolling field landscape. The farm has been known since the 15th century and the current main building from 1630 can be seen at the end of the long avenue that you drive through to get to the small red farm shed, where you can shop.
Nyborg's farm was one of the first in Sweden to produce cold-pressed rapeseed oil. This was in the early 1990s, when the oil was pressed and bottled at home in the kitchen. Today, the family has moved production to premises on the farm where several machines slowly and gently press the oil. Pressing and settling take place regularly throughout the year in dark, cool rooms to preserve the quality of the oil.
The flavorful oil is ideal with Nordic flavors such as potatoes, apples, pork, game meat and fresh and smoked fish. It complements butter and enhances its nuttiness. Perhaps the best flavor companions are rapeseed's relatives - mustard, cabbage and turnips. In addition, cold-pressed rapeseed oil contains many beneficial nutrients and is one of the best natural sources of Omega-3.
The land, which today is Nyborg's fields, was not too long ago lake bed consisting of different types of clay and lots of mineral-rich fossils. This is one of the key factors in the farm's rich and flavorful rapeseed oil. The clay soils retain moisture effectively and are full of calcium and phosphorus, which are absorbed by the rapeseed and preserved in the oil. The fact that it is possible to grow rapeseed so far north is thanks to the mild climate of Lake Mälaren. However, the rapeseed has to work a little harder and therefore has a longer flowering and ripening period. Factors that ultimately give a more complex taste!
At the farm stand you can buy the rapeseed oil both in bottles and in cans. It also sells some carefully selected good quality food products, such as jams and marmalades from Beaks and Nutella Cream from Skokloster Chocolate. The range is supplemented with eggs, game meat from the farm's forests and its own honey. You can also buy yourself a cup of coffee and from Easter to October there is Sänkdalens good ice cream.
