Kalvdans is a classic, old-fashioned right that many have good memories of. Unfortunately, Catherine at Koby Farm no longer has dairy cows, but still continues to do the culinary delicacy.
The calf dance is produced in a craftsmanship way and the base is the highly nutritious colostrum that the cow produces directly after calving. To the colostrum is added (according to Glada Kossan's recipe) eggs, sugar, salt and cinnamon and the arrangement is then baked on low heat in the oven.
The calf dance can then be enjoyed lukewarm or cold and with jam to your liking and taste.
